Description

Indulge in a quick and delicious treat with these homemade Raspberry Protein Pop Tarts! Packed with juicy raspberries and a boost of protein, they’re perfect for a satisfying breakfast or anytime snack.


Ingredients

– 2 cups all-purpose flour

– 1/2 cup protein powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup ice water

– 1 1/2 cups fresh raspberries

– 2 tablespoons honey


Instructions

1. In a food processor, pulse the flour, protein powder, and salt until combined.

2. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.

3. Slowly add the ice water and pulse until the dough just begins to come together.

4. Turn the dough out onto a lightly floured surface and gently knead into a ball. Wrap in plastic and refrigerate for at least 30 minutes.

5. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

6. On a lightly floured surface, roll the dough out to 1/8-inch thickness. Cut into rectangles, about 4×6 inches.

7. Place half of the rectangles on the prepared baking sheet. Top each with a tablespoon of fresh raspberries and a drizzle of honey.

8. Cover with the remaining dough rectangles and press the edges to seal.

9. Bake for 18-20 minutes, until the pastry is golden brown.

10. Allow to cool for 5 minutes before serving.

Notes

For a crisper crust, bake the pop tarts directly on the baking sheet without parchment paper. You can also experiment with different fruit fillings, such as blueberries or strawberries.
