Ingredients
– 1 1/2 cups all-purpose flour
– 1 cup graham cracker crumbs
– 1/2 cup unsalted butter, melted
– 1 (8 oz) package cream cheese, softened
– 1/2 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 cup fresh raspberries
– 1 cup white chocolate chips
Instructions
1. Preheat oven to 350°F. Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
2. In a medium bowl, combine the flour, graham cracker crumbs, and melted butter. Press the mixture into the prepared baking pan.
3. In a separate bowl, beat the cream cheese and sugar until smooth. Beat in the egg and vanilla until well combined.
4. Gently fold in the fresh raspberries and white chocolate chips.
5. Spread the cheesecake batter evenly over the crust.
6. Bake for 30-35 minutes, or until the center is almost set. Allow to cool completely before cutting into bars.
7. Refrigerate for at least 2 hours before serving.
Notes
For a more uniform appearance, you can lightly dust the top of the bars with powdered sugar before serving. These bars can be stored in the refrigerator for up to 5 days.
