Ingredients
– 1 cup ricotta cheese
– 1/4 cup shelled pistachios, finely chopped
– 2 tablespoons honey, plus more for drizzling
– 1/4 teaspoon vanilla extract
– Pinch of salt
Instructions
1. – In a medium bowl, mix together the ricotta, chopped pistachios, 2 tablespoons of honey, vanilla extract, and a pinch of salt until well combined.
2. – Using a small cookie scoop or spoon, portion the ricotta mixture into bite-sized balls and place them on a parchment-lined baking sheet.
3. – Refrigerate the bites for at least 30 minutes to firm up.
4. – Drizzle the chilled ricotta pistachio bites with additional honey just before serving.
Notes
These bites can be stored in the refrigerator for up to 3 days. For a variation, try rolling the bites in finely chopped pistachios or topping them with a sprinkle of sea salt.
