Ingredients

– 1 pound roasted beets, sliced

– 8 ounces goat cheese, crumbled

– 1/4 cup honey, plus more for drizzling

– 1 sheet puff pastry, thawed

– 1 egg, beaten

– Salt and pepper to taste


Instructions

1. – Preheat oven to 400°F (200°C).

2. – Roll out the puff pastry on a lightly floured surface and cut into 12 equal-sized squares or rounds.

3. – Place the puff pastry squares or rounds on a parchment-lined baking sheet.

4. – In a small bowl, mix the crumbled goat cheese and 1/4 cup of honey.

5. – Top each puff pastry square or round with a slice of roasted beet and a spoonful of the goat cheese-honey mixture.

6. – Brush the edges of the puff pastry with the beaten egg.

7. – Bake for 18-20 minutes, or until the pastry is golden brown.

8. – Remove from the oven and drizzle additional honey over the top.
