Description

Indulge in the rich, velvety texture and vibrant flavor of this Roasted Red Pepper Gouda Soup. Made with roasted red peppers, creamy gouda cheese, and a blend of aromatic spices, this comforting soup is perfect for a quick weeknight dinner or a cozy gathering with friends.

Ingredients

– 2 roasted red peppers, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cups chicken or vegetable broth

– 1 cup heavy cream

– 1 cup shredded gouda cheese

– 1 teaspoon smoked paprika

– 1/2 teaspoon dried thyme

– 1/4 teaspoon cayenne pepper

– Salt and pepper to taste

Instructions

1. – In a large pot, sauté the onion and garlic in a bit of olive oil until softened, about 5 minutes.

2. – Add the roasted red peppers, broth, heavy cream, and spices. Bring to a simmer and cook for 10-15 minutes, stirring occasionally.

3. – Use an immersion blender to puree the soup until smooth and creamy.

4. – Stir in the shredded gouda cheese and season with salt and pepper to taste.

5. – Serve hot, garnished with additional shredded cheese, fresh basil, or a drizzle of olive oil.

Notes

For a thicker soup, simmer for a few extra minutes or add a cornstarch slurry. You can also experiment with different cheese varieties, such as cheddar or Parmesan.
