Description

This easy, homemade Roasted Tomato Basil Soup is a cozy, comforting classic that’s ready in just 30 minutes. Featuring roasted tomatoes, garlic, and fresh basil, it’s a flavorful and satisfying soup perfect for chilly days.


Ingredients

– 3 pounds ripe tomatoes, halved

– 1 onion, chopped

– 4 cloves garlic, minced

– 2 tablespoons olive oil

– 1 teaspoon dried oregano

– 1/2 teaspoon red pepper flakes (optional)

– 4 cups vegetable or chicken broth

– 1 cup heavy cream or full-fat coconut milk

– 1 cup fresh basil leaves, chopped

– Salt and pepper to taste


Instructions

1. Preheat the oven to 400°F. Arrange the tomato halves cut-side up on a large baking sheet. Drizzle with olive oil and season with salt and pepper.

2. Roast the tomatoes for 30-40 minutes, until they are softened and caramelized.

3. In a large pot, sauté the onion in 2 tablespoons of olive oil over medium heat until translucent, about 5 minutes. Add the garlic and cook for 1 minute more.

4. Add the roasted tomatoes, oregano, red pepper flakes (if using), and broth to the pot. Bring to a simmer and cook for 10 minutes.

5. Using an immersion blender or regular blender, puree the soup until smooth.

6. Stir in the heavy cream or coconut milk and the chopped basil. Season with salt and pepper to taste.

7. Serve the Roasted Tomato Basil Soup warm, garnished with additional basil leaves, if desired.

Notes

This soup can be made ahead and reheated. It also freezes well for up to 3 months. For a thicker consistency, you can simmer the soup for a few more minutes before blending. Adjust the amount of broth to reach your desired consistency.
