Ingredients
– 1 lb salmon, finely chopped
– 1/2 cup breadcrumbs
– 2 eggs, beaten
– 2 tbsp lemon juice
– 3 cloves garlic, minced
– 1/4 cup chopped parsley
– 1 tsp salt
– 1/4 tsp black pepper
– 2 tbsp olive oil
for the Lemon Garlic Sauce:
– 1/2 cup mayonnaise
– 2 tbsp lemon juice
– 2 cloves garlic, minced
– 1 tbsp chopped parsley
– Salt and pepper to taste
Instructions
1. In a large bowl, combine the salmon, breadcrumbs, eggs, lemon juice, garlic, parsley, salt, and pepper. Mix well until fully incorporated.
2. Form the mixture into 8 equal-sized patties, about 1/2 inch thick.
3. In a large skillet, heat the olive oil over medium heat. Cook the patties for 3-4 minutes per side, until golden brown and cooked through.
4. For the Lemon Garlic Sauce, whisk together the mayonnaise, lemon juice, garlic, and parsley. Season with salt and pepper to taste.
