Ingredients

– 1 lb salmon fillets, skin removed and cut into bite-sized pieces

– 2 cups cooked sushi rice

– 1 avocado, sliced

– 2 sheets nori, cut into strips

– 2 tbsp toasted sesame seeds

– 2 tbsp thinly sliced scallions

– 2 tbsp soy sauce

– 1 tbsp rice vinegar

– 1 tsp sesame oil


Instructions

1. – Preheat your oven to 375°F (190°C).

2. – In a large bowl, combine the cooked sushi rice, soy sauce, rice vinegar, and sesame oil. Mix well.

3. – Spread the seasoned sushi rice in an 8×8 inch baking dish.

4. – Arrange the salmon pieces in a single layer on top of the rice.

5. – Top the salmon with sliced avocado, nori strips, sesame seeds, and scallions.

6. – Bake the Salmon Sushi Bake for 20-25 minutes, or until the salmon is cooked through and flaky.

7. – Serve hot, garnished with additional scallions and nori if desired.
