Description

Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 cup uncooked long-grain white rice

– 1 cup salsa verde

– 1 cup chicken broth

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tsp ground cumin

– 1/2 tsp dried oregano

– Salt and pepper to taste

– Chopped cilantro for garnish (optional)


Instructions

1. – Season the chicken with salt and pepper.

2. – Heat a large skillet over medium-high heat and add the chicken. Cook for 5-7 minutes, stirring occasionally, until chicken is lightly browned.

3. – Add the onion and garlic to the skillet and cook for 2-3 minutes, until fragrant.

4. – Stir in the rice, salsa verde, chicken broth, cumin, and oregano. Bring the mixture to a boil.

5. – Reduce heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

6. – Remove from heat and let stand for 5 minutes.

7. – Fluff the rice with a fork and serve immediately, garnished with chopped cilantro if desired.

Notes

– For a spicier dish, use a hotter salsa verde.

– Swap in brown rice for a healthier option.
