This Salsa Verde Chicken & Rice Skillet is a quick and easy one-pan meal that’s bursting with vibrant, flavor-packed ingredients. Tender chicken, fluffy rice, and a tangy, herby salsa verde sauce come together for a delicious weeknight dinner the whole family will love.
Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 cup long-grain white rice
– 1 cup salsa verde
– 1 cup chicken broth
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tsp ground cumin
– 1 tsp dried oregano
– Salt and pepper to taste
– Chopped cilantro for garnish
Instructions
1. 1. Season the chicken with salt and pepper.
2. 2. Heat a large skillet over medium-high heat and add a drizzle of oil. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. 3. Reduce the heat to medium and add the onion to the skillet. Cook for 2-3 minutes until softened.
4. 4. Add the garlic and cook for 1 minute until fragrant.
5. 5. Stir in the rice, salsa verde, chicken broth, cumin, and oregano. Bring the mixture to a simmer.
6. 6. Return the chicken to the skillet, cover, and reduce the heat to low. Simmer for 15-20 minutes, or until the rice is tender and the chicken is cooked through.
7. 7. Remove from heat and let stand for 5 minutes. Fluff the rice with a fork and serve, garnished with chopped cilantro.
Notes
For a creamier texture, stir in a few tablespoons of sour cream or plain Greek yogurt at the end. You can also add diced bell peppers or other vegetables to the skillet.
