Description

This Salted Honey & Chamomile Pie is a delightful balance of sweet and savory flavors. The flaky crust is filled with a rich honey custard and topped with fragrant chamomile flowers, creating a truly mouthwatering dessert.


Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 3/4 cup unsalted butter, chilled and cubed

– 1/4 cup ice water

– 1 cup honey

– 3 large eggs

– 1/2 teaspoon ground cardamom

– 1/4 teaspoon ground cinnamon

– 1/4 teaspoon ground ginger

– 1/4 teaspoon sea salt

– 1/2 cup fresh chamomile flowers


Instructions

1. In a food processor, combine the flour and salt. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs.

2. Slowly add the ice water and continue pulsing until the dough just starts to come together.

3. Turn the dough out onto a lightly floured surface and gather it into a disc. Wrap in plastic and refrigerate for at least 1 hour.

4. In a medium bowl, whisk together the honey, eggs, cardamom, cinnamon, ginger, and sea salt until well combined.

5. Roll out the chilled dough to fit a 9-inch pie plate. Transfer the dough to the pie plate and crimp the edges.

6. Pour the honey filling into the prepared crust and top with the fresh chamomile flowers.

7. Bake at 375°F for 35-40 minutes, or until the center is set and the crust is golden brown.

8. Allow the pie to cool completely before slicing and serving.

Notes

For a more pronounced honey flavor, use a darker, robust honey. You can also try using different types of edible flowers, such as lavender or rose petals, to top the pie.
