Ingredients

– 2 1/2 cups all-purpose flour

– 1 teaspoon salt

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup ice water

– 1 cup granulated sugar

– 2 large eggs

– 1/2 cup whole milk

– 1 teaspoon vanilla extract

– 2-3 drops green food coloring


Instructions

1. In a large bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs.

2. Add the ice water, 1 tablespoon at a time, mixing gently until the dough just begins to come together.

3. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

4. In a medium bowl, whisk together the sugar, eggs, milk, and vanilla until well combined.

5. Roll out the chilled dough into a 12-inch circle and transfer to a 9-inch pie dish.

6. Pour half of the egg mixture into the pie crust. Add the green food coloring to the remaining egg mixture and stir to combine.

7. Carefully pour the green egg mixture over the first layer, creating a swirled effect.

8. Bake at 375°F for 40-45 minutes, or until the center is set and the crust is golden brown.

9. Allow the pie to cool completely before serving.
