Ingredients
– 1 pound large shrimp, peeled and deveined
– 2 cups chicken or vegetable broth
– 1 cup uncooked grits
– 4 tablespoons unsalted butter, divided
– 1 cup shredded cheddar cheese
– 1 tablespoon Cajun seasoning
– 1 tablespoon olive oil
– 1 red bell pepper, diced
– 1 onion, diced
– 3 cloves garlic, minced
– 1 cup heavy cream
– 2 tablespoons lemon juice
– Salt and black pepper, to taste
– Chopped parsley, for garnish
Instructions
1. In a medium saucepan, bring the broth to a boil. Whisk in the grits, reduce heat to low, and cook, stirring occasionally, until thickened, about 15-20 minutes. Remove from heat and stir in 2 tablespoons of the butter and the cheddar cheese. Season with salt and pepper to taste.
2. In a large skillet, heat the remaining 2 tablespoons of butter and the olive oil over medium-high heat. Add the bell pepper, onion, and garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
3. Add the shrimp and Cajun seasoning to the skillet. Cook, stirring frequently, until the shrimp are pink and opaque, about 3-5 minutes.
4. Stir in the heavy cream and lemon juice. Bring the mixture to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
5. Serve the Cajun shrimp immediately over the cheesy grits, garnished with chopped parsley.
Notes
– For a spicier dish, increase the amount of Cajun seasoning or add a pinch of cayenne pepper.
– Leftover shrimp and grits can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
