Description

Crispy, flavorful Sichuan dry fried green beans are a classic Chinese side dish that come together quickly for an easy, weeknight meal. Coated in a savory, slightly spicy sauce, these addictive green beans are sure to become a new family favorite.


Ingredients

– 1 pound fresh green beans, trimmed and cut into 2-inch pieces

– 2 tablespoons vegetable oil

– 3 cloves garlic, minced

– 1 tablespoon grated fresh ginger

– 2 teaspoons Sichuan peppercorns, crushed

– 1 to 2 red chili peppers, thinly sliced (optional)

– 2 tablespoons soy sauce

– 1 tablespoon rice vinegar

– 1 teaspoon sesame oil

– 1 teaspoon sugar

– Salt and freshly ground black pepper, to taste


Instructions

1. Heat the vegetable oil in a large wok or skillet over high heat.

2. Add the green beans and stir-fry for 3-4 minutes, until they start to blister and char in spots.

3. Add the garlic, ginger, Sichuan peppercorns, and sliced chili peppers (if using). Stir-fry for 1 minute until fragrant.

4. Pour in the soy sauce, rice vinegar, sesame oil, and sugar. Toss to coat the green beans evenly and continue to cook for 2-3 minutes, until the sauce has thickened and the beans are tender-crisp.

5. Season with salt and pepper to taste.

6. Serve the Sichuan dry fried green beans hot, garnished with additional chili peppers if desired. Enjoy!

Notes

– For a spicier dish, increase the amount of chili peppers.

– Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
