Ingredients
– 1 lb boneless, skinless chicken breasts
– 4 cups low-sodium chicken broth
– 2 large carrots, peeled and diced
– 2 stalks celery, diced
– 1 yellow onion, diced
– 3 cloves garlic, minced
– 2 bay leaves
– 2 sprigs fresh thyme
– 8 oz wide egg noodles
– Salt and pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. – Place the chicken breasts in the bottom of a slow cooker.
2. – Add the chicken broth, carrots, celery, onion, garlic, bay leaves, and thyme.
3. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
4. – Remove the chicken from the slow cooker and shred or chop it into bite-sized pieces.
5. – Return the shredded chicken to the slow cooker.
6. – Add the egg noodles and cook for an additional 30 minutes, or until the noodles are tender.
7. – Season with salt and pepper to taste.
8. – Serve hot, garnished with fresh chopped parsley.
Notes
– For a thicker soup, you can add a cornstarch slurry (1-2 tbsp cornstarch mixed with water) in the last 30 minutes of cooking.
– Customize the vegetables by adding peas, corn, or other favorites.
– Use rotisserie chicken for an even quicker prep time.
