Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cans (28 oz each) crushed tomatoes
– 4 cups beef broth
– 1 tsp dried oregano
– 1 tsp dried basil
– 1/2 tsp salt
– 1/4 tsp black pepper
– 8 oz lasagna noodles, broken into pieces
– 1 cup shredded mozzarella cheese
– 1/2 cup grated parmesan cheese
Instructions
1. In a large skillet, cook the ground beef over medium heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. Add the onion and garlic to the skillet and cook for 2-3 minutes, until fragrant.
3. Transfer the beef mixture to a slow cooker. Add the crushed tomatoes, beef broth, oregano, basil, salt, and pepper. Stir to combine.
4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
5. During the last 30 minutes of cooking, add the lasagna noodle pieces and stir to submerge.
6. Serve the soup topped with shredded mozzarella and grated parmesan cheese.
Notes
For a thicker soup, you can add an extra 1/2 cup of broken lasagna noodles. If you prefer a spicier soup, add a pinch of red pepper flakes. This soup also freezes well for up to 3 months.
