Ingredients
– 1 cup sourdough starter
– 1 cup all-purpose flour
– 1/2 cup granulated sugar
– 1/2 cup unsalted butter, melted
– 1 egg
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1 cup fresh or frozen cherries, pitted and halved
Instructions
1. 1. Preheat your oven to 400°F (200°C). Grease a 12-cup muffin tin or line it with paper liners.
2. 2. In a large bowl, whisk together the sourdough starter, flour, sugar, melted butter, and egg until well combined.
3. 3. Stir in the baking powder, baking soda, and salt until just incorporated.
4. 4. Gently fold in the halved cherries.
5. 5. Scoop the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
6. 6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
7. 7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a sweeter muffin, you can increase the sugar to 3/4 cup. You can also use a mix of cherries, such as sweet and tart varieties, for a more complex flavor. These muffins are best enjoyed the same day, but they can be stored in an airtight container at room temperature for up to 3 days.
