Ingredients

– 3 pounds sweet potatoes, peeled and cubed

– 1/2 cup unsalted butter, melted

– 1/2 cup pure maple syrup

– 1/4 cup brown sugar

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/2 teaspoon salt

– 2 cups mini marshmallows


Instructions

1. Preheat the oven to 375°F. Grease a 9×13 inch baking dish.

2. In a large pot, cover the sweet potato cubes with water and bring to a boil. Reduce heat and simmer for 15-20 minutes, until the potatoes are fork-tender.

3. Drain the sweet potatoes and transfer to a large bowl. Mash the potatoes until smooth.

4. Add the melted butter, maple syrup, brown sugar, cinnamon, nutmeg, and salt. Stir until well combined.

5. Transfer the sweet potato mixture to the prepared baking dish and spread evenly.

6. Top with the mini marshmallows, covering the entire surface.

7. Bake for 20-25 minutes, or until the marshmallows are golden brown and puffed.

8. Remove from the oven and let cool for 5 minutes before serving.

Notes

This casserole can be made ahead of time and reheated before serving. It also makes a great leftover dish. For a crunchier topping, sprinkle chopped pecans or walnuts over the marshmallows before baking.
