Description

Ingredients

– 1 cup long-grain rice

– 1 (15 oz) can black beans, drained and rinsed

– 1 (14.5 oz) can diced tomatoes

– 1 onion, diced

– 1 bell pepper, diced

– 3 cloves garlic, minced

– 1 tsp cumin

– 1 tsp chili powder

– 1/2 tsp dried oregano

– Salt and pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. – In a large skillet or Dutch oven, sauté the onion and bell pepper in a bit of oil over medium heat until softened, about 5 minutes.

2. – Add the garlic and cook for 1 minute until fragrant.

3. – Stir in the rice, beans, diced tomatoes, cumin, chili powder, oregano, salt, and pepper. Bring the mixture to a boil.

4. – Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

5. – Remove from heat and let sit, covered, for 5 minutes.

6. – Fluff the rice and beans with a fork and garnish with fresh chopped cilantro.

Notes

– For extra flavor, use a can of fire-roasted diced tomatoes. – Feel free to add cooked chicken or chorizo for a heartier meal. – Top with shredded cheese, avocado, or a dollop of sour cream for additional toppings.
