Ingredients
– 1 pound spicy chorizo, diced
– 1 onion, diced
– 3 garlic cloves, minced
– 1 (15 oz) can pumpkin puree
– 4 cups chicken broth
– 1 cup heavy cream
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 1/2 teaspoon cayenne pepper
– Salt and pepper to taste
– Chopped cilantro for garnish
Instructions
1. In a large pot or Dutch oven, cook the diced chorizo over medium heat until crispy, about 5-7 minutes. Remove the chorizo from the pot and set aside.
2. Add the diced onion to the pot and sauté for 3-4 minutes until translucent.
3. Add the minced garlic and cook for 1 minute, until fragrant.
4. Pour in the pumpkin puree, chicken broth, heavy cream, cumin, smoked paprika, and cayenne pepper. Stir to combine.
5. Bring the soup to a simmer and let it cook for 15 minutes, stirring occasionally, until slightly thickened.
6. Using an immersion blender or regular blender, puree the soup until smooth and creamy.
7. Season the soup with salt and pepper to taste.
