Ingredients

– 1 cup cornmeal

– 1 cup all-purpose flour

– 2 teaspoons baking powder

– 1 teaspoon salt

– 1/4 cup unsalted butter, melted

– 3/4 cup milk

– 2 large eggs

– 1/2 cup diced jalapeños (seeded for less heat, if desired)


Instructions

1. – Preheat oven to 400°F (200°C). Grease a 24-cup mini muffin tin.

2. – In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.

3. – In a separate bowl, whisk together the melted butter, milk, and eggs.

4. – Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the diced jalapeños.

5. – Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

6. – Bake for 12-15 minutes, or until the cornbread bites are golden brown and a toothpick inserted into the center comes out clean.

7. – Allow the cornbread bites to cool in the tin for 5 minutes before transferring to a wire rack.

Notes
