Description

Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 (15 oz) cans white beans, drained and rinsed

– 1 (14 oz) can artichoke hearts, drained and chopped

– 4 cups low-sodium vegetable broth

– 5 oz fresh spinach, roughly chopped

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

– In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

– Add the minced garlic and cook for an additional 1 minute until fragrant.

– Stir in the white beans, chopped artichoke hearts, vegetable broth, chopped spinach, dried thyme, salt, and black pepper.

– Bring the soup to a simmer and cook for 15-20 minutes, stirring occasionally, until the spinach is wilted and the flavors have melded.

– Using an immersion blender or regular blender, blend a portion of the soup to achieve a creamy, velvety texture.
