These Spooky Ghost Brown Butter Pumpkin Cookies are a delightful and festive treat for the Halloween season. Featuring a rich, pumpkin-spiced dough made with nutty brown butter and adorned with ghostly shapes, they’re sure to delight both kids and adults alike.
Ingredients
– 1 cup (2 sticks) unsalted butter
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground nutmeg
– 1 cup packed light brown sugar
– 1 large egg
– 1 cup pumpkin puree
– 1 teaspoon vanilla extract
– Chocolate chips or white chocolate chips for decorating (optional)
Instructions
1. 1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
2. 2. In a medium saucepan, melt the butter over medium heat, stirring occasionally, until it turns a nutty brown color, about 5-7 minutes. Remove from heat and let cool slightly.
3. 3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
4. 4. In a large bowl, beat the brown sugar and the slightly cooled brown butter until well combined. Beat in the egg, pumpkin puree, and vanilla extract until smooth.
5. 5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
6. 6. Scoop the dough by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.
7. 7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
8. 8. If desired, decorate the cooled cookies with chocolate chips or white chocolate chips to create ghostly shapes.
Notes
For best results, use high-quality canned pumpkin puree. The brown butter adds a rich, nutty flavor to these cookies, but you can use regular melted butter if preferred. These cookies can be stored in an airtight container at room temperature for up to 5 days.
