Ingredients

– 2 cups shredded cabbage

– 1 cup shredded carrots

– 1 red bell pepper, thinly sliced

– 1 cup thinly sliced cucumber

– 1/4 cup chopped fresh cilantro

– 1/4 cup chopped fresh mint

– 2 tablespoons chopped roasted peanuts

– 2 tablespoons rice vinegar

– 2 tablespoons smooth peanut butter

– 1 tablespoon soy sauce

– 1 tablespoon honey

– 1 teaspoon sesame oil

– 1 teaspoon fresh lime juice

– 1 garlic clove, minced


Instructions

1. – In a large bowl, combine the shredded cabbage, carrots, bell pepper, cucumber, cilantro, and mint.

2. – In a small bowl, whisk together the rice vinegar, peanut butter, soy sauce, honey, sesame oil, lime juice, and garlic to make the peanut dressing.

3. – Pour the peanut dressing over the salad and toss gently to coat.

4. – Sprinkle the chopped peanuts over the top.

5. – Serve immediately.

Notes

– For a heartier meal, you can add cooked shrimp, grilled chicken, or tofu to the salad.
