Ingredients

– 4 cups shredded romaine lettuce

– 1 cup shredded red cabbage

– 1 cup shredded carrots

– 1 cup cooked and shredded chicken (or tofu for a vegetarian option)

– 1/4 cup chopped fresh cilantro

– 2 tablespoons chopped green onions

– 2 tablespoons rice vinegar

– 1 tablespoon sesame oil

– 1 tablespoon fresh grated ginger

– 1 tablespoon honey

– 1 teaspoon Sriracha or other hot sauce

– 1/4 teaspoon salt


Instructions

1. In a large salad bowl, combine the shredded romaine lettuce, red cabbage, carrots, chicken (or tofu), cilantro, and green onions.

2. In a small bowl, whisk together the rice vinegar, sesame oil, grated ginger, honey, Sriracha, and salt to make the spicy ginger dressing.

3. Drizzle the dressing over the salad and toss gently to coat the ingredients evenly.

4. Serve the Spring Roll Salad immediately, garnished with additional cilantro or green onions if desired.

Notes

For a heartier meal, you can add cooked quinoa or rice noodles to the salad. The dressing can also be used as a marinade for grilled or baked chicken or tofu.
