Ingredients
– 1 lb. flank steak, cut into bite-sized pieces
– 1 cup uncooked white rice
– 1 cup queso fresco, crumbled
– 1 tablespoon olive oil
– 1 teaspoon chili powder
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 teaspoon smoked paprika
– Salt and pepper to taste
Instructions
1. 1. In a large skillet, heat the olive oil over medium-high heat.
2. 2. Add the steak pieces and season with chili powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the steak is browned and cooked through.
3. 3. Add the uncooked rice and 2 cups of water to the skillet. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
4. 4. Remove from heat and stir in the crumbled queso fresco until melted and well combined.
5. 5. Serve hot and enjoy!
Notes
For extra creaminess, you can stir in a few tablespoons of heavy cream or milk along with the queso. If you prefer a spicier dish, add in some diced jalapeños or a dash of hot sauce.
