Ingredients

– 16 ounces cremini mushrooms, stems removed and chopped

– 8 ounces cream cheese, softened

– 1/2 cup grated parmesan cheese

– 2 cloves garlic, minced

– 1 tablespoon fresh thyme leaves, plus more for garnish

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F (190°C).

2. In a food processor, pulse the chopped mushroom stems until finely chopped.

3. In a medium bowl, combine the cream cheese, parmesan, garlic, 1 tablespoon of thyme, salt, and pepper. Mix until well blended.

4. Stir in the chopped mushroom stems.

5. Stuff the mushroom caps with the cream cheese mixture, packing it in gently.

6. Arrange the stuffed mushrooms in a baking dish.

7. Bake for 20-25 minutes, or until the tops are golden brown and bubbly.

8. Garnish with additional fresh thyme leaves before serving.
