These Stuffing Muffins are a delicious and easy-to-make twist on classic Thanksgiving stuffing. Baked in a muffin tin, they’re perfect for serving as a side dish or appetizer at your holiday feast.
Ingredients
– 8 cups cubed bread
– 1 cup diced onion
– 1 cup diced celery
– 1/2 cup diced carrots
– 2 cloves garlic, minced
– 1 teaspoon dried sage
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 1/2 cups chicken or vegetable broth
– 2 eggs, beaten
Instructions
1. – Preheat oven to 375°F. Grease a 12-cup muffin tin.
2. – In a large bowl, combine the cubed bread, onion, celery, carrots, garlic, sage, thyme, salt, and pepper.
3. – Pour the broth over the bread mixture and stir to combine.
4. – Fold in the beaten eggs until everything is evenly distributed.
5. – Scoop the stuffing mixture into the prepared muffin cups, pressing down gently to compact.
6. – Bake for 20-25 minutes, until the tops are golden brown.
7. – Let cool in the muffin tin for 5 minutes before transferring to a serving plate.
Notes
For a heartier muffin, add cooked sausage or diced apples to the stuffing mixture. Store any leftover muffins in an airtight container in the refrigerator for up to 4 days.
