Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
– 3 cups confectioners’ sugar
– 3-4 tablespoons milk
Instructions
1. – Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
2. – In a medium bowl, whisk together the flour, baking powder, and salt.
3. – In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla.
4. – Gradually add the dry ingredients to the wet ingredients and mix until just combined.
5. – Scoop dough by the tablespoonful and place them 2 inches apart on the prepared baking sheets.
6. – Bake for 8-10 minutes, until the edges are lightly golden. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
7. – In a medium bowl, whisk together the confectioners’ sugar and 3 tablespoons of milk until smooth and spreadable. Add an additional 1 tablespoon of milk if the icing is too thick.
8. – Spread or pipe the royal icing onto the cooled cookies. Allow the icing to set before serving.
Notes
For a thicker icing, use less milk. For a thinner icing, add more milk. Decorate the iced cookies with sprinkles, edible glitter, or other toppings as desired.
