Description

Sumac Cucumbers are a refreshing and flavorful appetizer or side dish that showcases the bright, tangy flavor of sumac spice. Thinly sliced cucumbers are tossed with a simple dressing of olive oil, lemon juice, and sumac, creating a vibrant and tantalizing summer treat.

Ingredients

– 2 English cucumbers, thinly sliced

– 2 tablespoons olive oil

– 1 tablespoon lemon juice

– 1 teaspoon sumac spice

– 1 garlic clove, minced

– 2 tablespoons chopped fresh dill or parsley

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

Instructions

1. In a large bowl, combine the sliced cucumbers, olive oil, lemon juice, sumac, garlic, dill or parsley, salt, and pepper. Toss gently to coat the cucumbers evenly.

2. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

3. Serve chilled or at room temperature as a refreshing appetizer or side dish.

Notes

For a creamier texture, you can stir in a tablespoon of Greek yogurt or sour cream before serving. The sumac spice can be adjusted to taste, depending on your preference for tartness. This dish is also delicious with the addition of thinly sliced red onion or bell peppers.
