Description

Refreshing and full of flavor, these homemade summer rolls are a delightful appetizer or light meal perfect for hot weather. Wrapped in translucent rice paper, the rolls are filled with vibrant vegetables, fresh herbs, and your choice of protein.


Ingredients

– Rice paper wrappers

– Shredded carrots

– Thinly sliced cucumber

– Fresh mint leaves

– Fresh cilantro leaves

– Cooked shrimp or tofu (optional)

– Dipping sauce (such as peanut, hoisin, or fish sauce)


Instructions

1. – Soak the rice paper wrappers in warm water until softened and pliable.

2. – Lay the wrapper on a clean surface and arrange the fillings in a horizontal line across the center.

3. – Fold the bottom of the wrapper over the fillings, then fold in the sides and tightly roll up the wrapper to enclose the filling.

4. – Repeat with remaining wrappers and fillings.

5. – Serve the summer rolls chilled with the dipping sauce on the side.

Notes

– For a heartier meal, add cooked shrimp or tofu to the filling.

– Experiment with different vegetables and herbs to customize the flavors.
