Ingredients

– 1 lb summer sausage, sliced into 1-inch pieces

– 1 lb andouille sausage, sliced into 1-inch pieces

– 1 large red bell pepper, sliced

– 1 large green bell pepper, sliced

– 1 yellow onion, sliced

– 3 cloves garlic, minced

– 1 cup heavy cream

– 1 tbsp Cajun seasoning

– 1 tsp smoked paprika

– Salt and black pepper to taste


Instructions

1. – In a large skillet over medium-high heat, cook the summer sausage and andouille sausage until lightly browned, about 5-7 minutes. Remove sausage from skillet and set aside.

2. – Add the sliced bell peppers and onion to the skillet. Sauté for 5-7 minutes, until vegetables are tender.

3. – Stir in the minced garlic and cook for 1 minute, until fragrant.

4. – Pour in the heavy cream and add the Cajun seasoning and smoked paprika. Bring to a simmer and let the sauce thicken, about 2-3 minutes.

5. – Return the cooked sausage to the skillet and toss to coat in the creamy sauce.

6. – Season with salt and black pepper to taste.

7. – Serve the Summer Sausage Skillet with Andouille Sausage hot, over rice or with crusty bread.
