Ingredients
– 3 pounds sweet potatoes, peeled and cubed
– 1/2 cup unsalted butter, softened
– 1/2 cup brown sugar
– 1/4 cup milk
– 2 eggs
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 2 cups miniature marshmallows
Instructions
1. – Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2. – In a large pot, cover the sweet potato cubes with water and bring to a boil. Cook until tender, about 15-20 minutes. Drain and mash the sweet potatoes.
3. – In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, milk, eggs, vanilla, cinnamon, nutmeg, and salt. Mix until well incorporated.
4. – Transfer the sweet potato mixture to the prepared baking dish and spread evenly.
5. – Top the sweet potato mixture with the marshmallows, covering the surface completely.
