Ingredients

– 2 cups all-purpose flour

– 1/2 teaspoon salt

– 3/4 cup unsalted butter, chilled and cubed

– 3 large eggs

– 1 cup granulated sugar

– 1 cup packed light brown sugar

– 1 cup mashed sweet potatoes (about 1 large sweet potato)

– 1/2 cup heavy cream

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon ground cloves


Instructions

1. Preheat the oven to 350°F. Grease a 9×13-inch baking pan.

2. In a food processor, pulse the flour and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs. Press the mixture into the prepared baking pan, creating an even crust.

3. In a large bowl, whisk together the eggs, granulated sugar, and brown sugar until smooth. Stir in the mashed sweet potatoes, heavy cream, cinnamon, nutmeg, and cloves until well combined.

4. Pour the sweet potato filling over the prepared crust, spreading it evenly.

5. Bake for 40-45 minutes, or until the center is set and the edges are lightly golden. Allow the bars to cool completely before cutting into squares.

Notes

For a richer flavor, use dark brown sugar instead of light brown sugar. You can also add a pinch of ginger or allspice to the filling. These bars can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.
