Description

This creamy, comforting Sweet Potato Soup is the perfect cozy meal for a chilly day. Packed with nourishing sweet potatoes, aromatic spices, and a touch of creaminess, it’s a delicious and easy-to-make recipe the whole family will love.


Ingredients

– 2 lbs sweet potatoes, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups vegetable broth

– 1 tsp ground cumin

– 1/2 tsp ground cinnamon

– 1/4 tsp cayenne pepper

– 1 cup milk or heavy cream

– Salt and pepper to taste

– Chopped chives, sour cream, and croutons for garnish


Instructions

1. – In a large pot, sauté the onion and garlic in a little oil until softened, about 5 minutes.

2. – Add the diced sweet potatoes, vegetable broth, cumin, cinnamon, and cayenne. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the sweet potatoes are very soft.

3. – Carefully transfer the soup to a blender and puree until smooth and creamy. Return the blended soup to the pot.

4. – Stir in the milk or cream and season with salt and pepper to taste.

5. – Serve hot, garnished with chopped chives, a dollop of sour cream, and crispy croutons.

Notes

– For a vegan version, use plant-based milk or omit the cream.

– Try garnishing with roasted pepitas, crumbled bacon, or a drizzle of olive oil.
