Indulge in the bold flavors of Thailand with these Swicy Thai Peanut Noodles! This 30-minute meal features tender rice noodles tossed in a creamy, spicy peanut sauce and loaded with fresh veggies for a satisfying and flavorful dish.


Ingredients

– 8 ounces rice noodles

– 1/2 cup creamy peanut butter

– 1/2 cup coconut milk

– 2 tablespoons soy sauce

– 1 tablespoon brown sugar

– 1 tablespoon lime juice

– 1 teaspoon chili garlic sauce (or more to taste)

– 2 cloves garlic, minced

– 1 inch ginger, grated

– 2 cups shredded cabbage

– 1 red bell pepper, sliced

– 1/2 cup shredded carrots

– 2 green onions, sliced

– 1/4 cup chopped cilantro

– 2 tablespoons crushed peanuts


Instructions

1. Cook the rice noodles according to package instructions. Drain and set aside.

2. In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and chili garlic sauce until well combined.

3. Heat a large skillet or wok over medium heat. Add the garlic and ginger and cook for 1 minute, until fragrant.

4. Add the cabbage, bell pepper, and carrots to the skillet. Stir-fry for 2-3 minutes, until the vegetables are slightly softened.

5. Add the cooked rice noodles and the peanut sauce to the skillet. Toss everything together until the noodles are evenly coated in the sauce.

6. Remove from heat and stir in the green onions and cilantro.

7. Serve the Swicy Thai Peanut Noodles immediately, garnished with the crushed peanuts.

Notes

For a spicier dish, add more chili garlic sauce to the peanut sauce. You can also add cooked chicken or shrimp for extra protein.
