Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 bell pepper, diced

– 1 can (15 oz) black beans, drained and rinsed

– 1 can (15 oz) pinto beans, drained and rinsed

– 1 can (15 oz) diced tomatoes

– 1 can (15 oz) tomato sauce

– 1 can (15 oz) corn, drained

– 2 cups beef broth

– 2 tbsp taco seasoning

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes.

2. – Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.

3. – Stir in the diced bell pepper and continue cooking for 2-3 minutes.

4. – Add the black beans, pinto beans, diced tomatoes, tomato sauce, corn, beef broth, and taco seasoning. Stir to combine.

5. – Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded and the soup has thickened slightly.

6. – Season with salt and pepper to taste.

7. – Serve hot, garnished with your favorite toppings like shredded cheese, sour cream, and chopped cilantro.

Notes

– For a thicker soup, you can add a can of refried beans or mash some of the beans with a potato masher.

– Customize the spice level by adjusting the amount of taco seasoning or adding diced jalapeños.
