Description

This hearty and flavorful Taco Soup is the perfect comfort meal for busy weeknights. Made with ground beef, tender vegetables, and bold spices, it’s ready in just 30 minutes.


Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 packet taco seasoning

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can pinto beans, drained and rinsed

– 1 (15 oz) can corn, drained

– 1 (14.5 oz) can diced tomatoes

– 4 cups beef broth

– Shredded cheddar cheese, for serving

– Sour cream, for serving

– Chopped fresh cilantro, for serving


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until the onion is translucent.

3. – Stir in the taco seasoning and cook for 1 minute.

4. – Add the black beans, pinto beans, corn, diced tomatoes, and beef broth. Stir to combine.

5. – Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded.

6. – Serve the Taco Soup hot, topped with shredded cheddar cheese, sour cream, and chopped fresh cilantro.

Notes

For a spicier soup, add a diced jalapeño or chipotle in adobo sauce. You can also customize the toppings with diced avocado, crushed tortilla chips, or a squeeze of lime juice.
