Ingredients

– 1 package (19 oz) cheese tortellini

– 1 red bell pepper, diced

– 1 cup cherry tomatoes, halved

– 1/2 cup sliced black olives

– 1/2 cup thinly sliced red onion

– 1/4 cup chopped fresh basil

– 1/4 cup grated Parmesan cheese

– 3 tablespoons olive oil

– 2 tablespoons red wine vinegar

– 1 tablespoon lemon juice

– 1 teaspoon Dijon mustard

– 1/2 teaspoon dried oregano

– Salt and black pepper to taste


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and rinse with cold water to cool completely.

2. 2. In a large bowl, combine the cooked and cooled tortellini, diced bell pepper, halved cherry tomatoes, sliced black olives, thinly sliced red onion, and chopped fresh basil.

3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, and dried oregano. Season with salt and black pepper to taste.

4. 4. Pour the dressing over the tortellini salad and toss gently to coat.
