Description

Ingredients

– 8 ounces goat cheese, softened

– 2 tablespoons fresh thyme, finely chopped

– 2 tablespoons fresh rosemary, finely chopped

– 1 tablespoon fresh parsley, finely chopped

– 1 teaspoon lemon zest

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

– 1 sheet puff pastry, thawed if frozen


Instructions

1. In a medium bowl, combine the softened goat cheese, thyme, rosemary, parsley, lemon zest, salt, and pepper. Mix well until fully incorporated.

2. Line a loaf pan with parchment paper, leaving some overhang on the sides.

3. Unroll the puff pastry and press it into the bottom and up the sides of the prepared loaf pan, allowing the excess to hang over the edges.

4. Spread the herbed goat cheese mixture evenly into the puff pastry-lined loaf pan.

5. Fold the excess puff pastry over the top of the cheese, crimping and sealing the edges.

6. Refrigerate the terrine for at least 2 hours, or up to 24 hours, to allow it to set.

7. When ready to serve, remove the terrine from the refrigerator and let it sit at room temperature for 15 minutes.

8. Carefully invert the terrine onto a serving platter and peel off the parchment paper.

9. Slice the terrine and serve with crackers, crostini, or your favorite accompaniments.

Notes

For a more pronounced herb flavor, feel free to increase the amount of fresh herbs used. The terrine can be made up to 24 hours in advance and stored in the refrigerator until ready to serve.
