Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 4 tablespoons unsalted butter
– 1 onion, diced
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon paprika
– 1/2 teaspoon ground cumin
– 1/4 teaspoon cayenne pepper
– 1 cup heavy cream
– 1/4 cup grated Parmesan cheese
– 2 tablespoons chopped fresh parsley, plus more for garnish
– Salt and black pepper, to taste
Instructions
1. In a large skillet, melt 2 tablespoons of the butter over medium-high heat.
2. Add the chicken and cook, stirring occasionally, until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
3. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the onion and sauté until softened, about 5 minutes.
4. Stir in the garlic, oregano, paprika, cumin, and cayenne pepper. Cook for 1 minute, until fragrant.
5. Pour in the heavy cream and Parmesan cheese. Bring the mixture to a simmer and cook, stirring occasionally, until slightly thickened, about 5 minutes.
6. Return the cooked chicken to the skillet and stir to coat in the creamy sauce. Cook for an additional 2-3 minutes, until the chicken is heated through.
7. Remove from heat and stir in the chopped parsley. Season with salt and black pepper to taste.
