Ingredients
– 2 cups sliced cucumbers
– 1 pound boneless, skinless chicken breasts, cooked and shredded
– 1/2 cup thinly sliced red onion
– 2 tablespoons chopped fresh cilantro
– 2 tablespoons chopped fresh mint
– 2 tablespoons fresh lime juice
– 1 tablespoon fish sauce
– 1 tablespoon honey
– 1/4 teaspoon crushed red pepper flakes
– 2 tablespoons crushed roasted peanuts
Instructions
1. In a large bowl, combine the sliced cucumbers, shredded chicken, red onion, cilantro, and mint.
2. In a small bowl, whisk together the lime juice, fish sauce, honey, and red pepper flakes.
3. Pour the dressing over the salad and toss gently to coat.
4. Top the salad with the crushed peanuts.
5. Serve chilled or at room temperature.
Notes
For a spicier salad, increase the amount of crushed red pepper flakes. You can also add diced mango or bell pepper for extra color and flavor.
