Ingredients

– 1 pound boneless, skinless chicken breasts, pounded thin

– 1 cup buttermilk

– 2 cups all-purpose flour

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1 teaspoon paprika

– 1/2 teaspoon cayenne pepper

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 2 cups shredded cabbage

– 1 carrot, grated

– 2 green onions, sliced

– 2 tablespoons rice vinegar

– 1 tablespoon honey

– 1/4 teaspoon sesame oil

– 6 brioche buns, toasted


Instructions

1. In a shallow bowl, combine the chicken and buttermilk. Cover and refrigerate for at least 30 minutes (or up to 4 hours).

2. In a shallow dish, mix the flour, garlic powder, onion powder, paprika, cayenne, salt, and black pepper.

3. Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge the chicken in the seasoned flour, pressing to help it adhere.

4. In a large skillet, heat 1/2 inch of oil over medium-high heat. Fry the chicken for 3-4 minutes per side, until golden brown and cooked through. Drain on a paper towel-lined plate.

5. In a medium bowl, combine the shredded cabbage, grated carrot, and sliced green onions. In a small bowl, whisk together the rice vinegar, honey, and sesame oil. Pour the dressing over the slaw and toss to coat.

6. To assemble the sandwiches, place a fried chicken patty on the bottom half of each toasted brioche bun. Top with a generous amount of the Thai slaw.

Notes

For a spicier slaw, add a teaspoon of Sriracha or other hot sauce to the dressing. The fried chicken can also be made ahead and reheated before assembling the sandwiches.
