Ingredients

– 1 lb boneless, skinless chicken thighs, cut into bite-size pieces

– 8 oz ramen noodles

– 1 cup coconut milk

– 1/2 cup creamy peanut butter

– 2 tbsp soy sauce

– 1 tbsp brown sugar

– 1 tsp red curry paste

– 2 cloves garlic, minced

– 1 inch ginger, grated

– 1 cup sliced mushrooms

– 1 cup shredded cabbage

– 1/2 cup sliced green onions

– 2 tbsp chopped cilantro

– Lime wedges for serving


Instructions

1. 1. Bring a large pot of water to a boil. Cook the ramen noodles according to package instructions. Drain and set aside.

2. 2. In a large skillet or wok, heat a drizzle of oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Transfer to a plate.

3. 3. In the same skillet, combine the coconut milk, peanut butter, soy sauce, brown sugar, and red curry paste. Whisk until smooth and heated through.

4. 4. Add the garlic, ginger, mushrooms, and cabbage to the sauce. Cook for 2-3 minutes, until the vegetables are tender.

5. 5. Add the cooked ramen noodles and chicken back to the skillet. Toss everything together until well combined and heated through.

6. 6. Serve the Thai Peanut Chicken Ramen immediately, garnished with green onions and cilantro. Serve with lime wedges on the side.

Notes

For a spicier version, add more red curry paste. You can also customize the vegetables to your liking, such as adding bell peppers or snap peas.
