Description

Tender, juicy chicken wrapped in fresh vegetables and a creamy, flavorful Thai peanut sauce. These Thai Peanut Chicken Wraps are a quick and easy family meal that’s ready in just 10 minutes.


Ingredients

– 1 lb boneless, skinless chicken breasts, grilled and shredded

– 1 cup shredded cabbage

– 1 cup shredded carrots

– 1 cup chopped cucumber

– 1/2 cup chopped green onions

– 1/4 cup chopped fresh cilantro

– 1/2 cup creamy peanut butter

– 1/4 cup low-sodium soy sauce

– 2 tbsp honey

– 1 tbsp rice vinegar

– 1 tsp sesame oil

– 1 tsp grated ginger

– 1/4 tsp red pepper flakes (optional)

– 8 large lettuce leaves or whole wheat tortillas


Instructions

1. 1. In a medium bowl, mix together the shredded chicken, cabbage, carrots, cucumber, green onions, and cilantro.

2. 2. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, and red pepper flakes (if using) to make the peanut sauce.

3. 3. Spread a few tablespoons of the peanut sauce over each lettuce leaf or tortilla. Top with a portion of the chicken and vegetable mixture.

4. 4. Carefully roll up the lettuce leaves or tortillas and serve immediately.

Notes

– For a lower-carb option, use large lettuce leaves instead of tortillas.

– Customize the fillings with your favorite fresh veggies.
