Ingredients

– 4 tablespoons unsalted butter

– 1/4 cup all-purpose flour

– 4 cups chicken or turkey stock

– 1 medium onion, finely chopped

– 3 cloves garlic, minced

– 1 teaspoon fresh thyme, chopped

– 1 bay leaf

– Salt and freshly ground black pepper, to taste


Instructions

1. 1. In a large saucepan, melt the butter over medium heat.

2. 2. Add the onion and sauté until softened, about 5 minutes.

3. 3. Stir in the garlic and thyme, and cook for 1 minute until fragrant.

4. 4. Whisk in the flour and cook for 2 minutes, stirring constantly.

5. 5. Gradually whisk in the stock, and add the bay leaf. Bring to a simmer and cook, stirring occasionally, until thickened, about 10-15 minutes.

6. 6. Season with salt and pepper to taste.

7. 7. Remove the bay leaf before serving.

Notes

For a smooth, lump-free gravy, be sure to whisk the flour into the stock thoroughly. You can also use a wire mesh strainer to remove any small lumps. Feel free to adjust the consistency to your desired thickness by adding more stock for a thinner gravy, or simmering longer for a thicker texture.
