Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 28 oz canned diced tomatoes

– 4 cups vegetable or chicken broth

– 1 teaspoon dried oregano

– 1/2 teaspoon dried basil

– Salt and pepper to taste

– For the dumplings:

– 1 cup all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 2 tablespoons butter, cold and cubed

– 1/2 cup shredded cheddar cheese

– 1/4 cup chopped fresh parsley

– 1/4 cup milk


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5-7 minutes until translucent.

2. – Add the garlic and sauté for 1 minute until fragrant.

3. – Add the diced tomatoes, broth, oregano, and basil. Season with salt and pepper to taste. Bring the soup to a simmer and let it cook for 15-20 minutes.

4. – In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese and parsley.

5. – Add the milk and stir just until a sticky dough forms. Do not overmix.

6. – Drop the dough by heaping tablespoonfuls onto the simmering soup. Cover and cook for 15-20 minutes, or until the dumplings are cooked through.

7. – Serve the tomato soup warm, with the cheesy herbed dumplings on top.

Notes

– For a thicker soup, use less broth or let it simmer for longer.
