Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 (28-ounce) cans crushed tomatoes

– 2 cups chicken broth

– 1 teaspoon dried basil

– 1/2 teaspoon dried oregano

– Salt and pepper to taste

– For the Cheddar Bay Dumplings:

– 2 cups all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 4 tablespoons cold unsalted butter, cubed

– 3/4 cup shredded cheddar cheese

– 3/4 cup milk

Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.

2. – Add the crushed tomatoes, chicken broth, basil, and oregano. Season with salt and pepper to taste. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally.

3. – Meanwhile, make the cheddar bay dumplings. In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese.

4. – Add the milk and stir just until a sticky dough forms. Drop the dough by rounded tablespoonfuls into the simmering soup.

5. – Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through.

6. – Serve the tomato soup with the cheddar bay dumplings immediately, garnished with fresh thyme if desired.

Notes

For a creamier soup, you can stir in a splash of heavy cream or half-and-half at the end. You can also experiment with different types of cheese in the dumplings, such as Parmesan or Gruyère.
