Description

These no-bake Tropical Chill Coconut Lime Bars are a refreshing, easy-to-make dessert that’s bursting with bright, tangy flavor. With a creamy coconut-lime filling and a crisp graham cracker crust, they’re the perfect sweet treat for warm weather.


Ingredients

– 1 1/2 cups graham cracker crumbs

– 1/2 cup unsweetened shredded coconut

– 1 (14 oz) can sweetened condensed milk

– 1/2 cup fresh lime juice (about 4-5 limes)

– 1 tbsp lime zest


Instructions

1. Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

2. In a medium bowl, mix together the graham cracker crumbs and shredded coconut. Press the mixture firmly into the bottom of the prepared pan.

3. In another bowl, whisk together the sweetened condensed milk and lime juice until well combined.

4. Pour the coconut-lime filling over the graham cracker crust and spread it out evenly.

5. Sprinkle the top with the lime zest.

6. Refrigerate for at least 2 hours, or until set.

7. Use the parchment paper to lift the bars out of the pan. Cut into squares and serve chilled.

Notes

For a more intense coconut flavor, toast the shredded coconut in a dry skillet before adding it to the crust. You can also use key limes in place of regular limes for a tarter flavor. Store leftovers in the refrigerator for up to 1 week.
