Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 cup jasmine rice
– 1 (13.5 oz) can coconut milk
– 1 red bell pepper, sliced
– 1 yellow onion, diced
– 2 cloves garlic, minced
– 1 tsp ground ginger
– 1 tsp curry powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 2 tbsp chopped fresh cilantro
– 1 lime, cut into wedges
Instructions
1. – Cook the rice according to package instructions.
2. – In a large skillet, sauté the chicken, bell pepper, and onion over medium-high heat until the chicken is cooked through, about 6-8 minutes.
3. – Add the garlic, ginger, curry powder, salt, and pepper. Cook for 1 minute until fragrant.
